Marinated anchovies are also known as white or fresh anchovies. At the Pelagos delicacy manufacture plant they exclusively process the daily catch which guarantees a unique taste and white colour of the hand filleted anchovies. The anchovies are then put into a light marinade (only white wine vinegar, water and marine salt).
The refined taste, the pure white colour and the firm consistency of the muscle flesh are quality determinig features which Pelagos is proud of.

The anchovy processing plant has a capacity of 1000 tons. Small pelagic fish caught either by the own fleet of Pelagos Net Farm or cooperation ships is transported in boats directly to the plant where it is being salted, marinated, filleted and frozen with high quality IQF systems.
