Norwegian Premium Cod - Bakalar - Stockfish
In Dalmatia, cod is traditionally eaten as a fasting food on Christmas Eve. The dried cod from Norway is chopped up and soaked in water for 48 hours. After two days, the stockfish is soft enough to be separated from the skin and bones and ready for further preparation. Now boil the stockfish for two hours in salted water, add pepper, rosemary or other Mediterranean spices. Meanwhile you boil the potatoes and then cut them into slices. After the fish is cooked, strain it and let it cool down. With the potatoes, chopped garlic and parsley, a little lemon juice and olive oil, mash everything into an even paste or chop in the food processor.
