bread dip with olive oil


  • 3-4 cloves of garlic
  • 20g grated Parmesan cheese
  • a handful of fresh parsley
  • salt, pepper
  • extra virgin olive oil
  • about 2 tsp of Balsamic vinegar or more, up to taste
  • 1 tsp of freshly chopped peperoncino, optional
for 4 person(s)


Chop the garlic and parsley finely.
Place in a small deep serving plate.
Add the Parmiggiano, salt, pepper, peperoncino then pour over the olive oil, so all the ingredients are covered.
Add the Balsamic vinegar, up to taste.
Stir and serve with some homemade bread, fresh or toasted & some Istrian delicacies and local
veggies on the side.


As a side dish for truffle sausage and cheese with truffles. Serve with a truffle and olive paste (tapenada) and some vegetables!
