Istrian sheep cheese with truffle
Semi-hard sheep cheese with chopped truffles. It has a unique and distinctive fine taste. It is made using a special recipe. Serve it as a cold starter accompanied with Istrian dry-cured ham, melted on top of polenta or use it to prepare “fritaja” with truffles. Many a gourmet find precisely this cheese to be their favourite delicatessen, all the more reason for you to treat yourself to it and enjoy or give it as a present to your loved ones.

- 50g sliced black truffles (fresh or in olive oil)
- 60g butter
- 40g grated pager cheese
- 30g grated cheese with truffles
- 8 eggs
- little salt
- Melt the butter and add sliced black truffles to the leaves
- when it boils, mix in whipped eggs to which we have added a little salt and grated cheese with truffles
- Finally, add pager cheese to the finished frittata
