This homemade Istrian ham is a whole pork bone ham weighing about 5 to 7 kilograms, which is matured through traditional storage by dry-salting with sea salt and natural spices and drying in a smoke-free room for one to two years.

With the "boneless" variant, Mario cuts 1 or 1/2 kilos from the whole piece.
With the "cut" variant, you get the Pršut cut wafer-thin.
In both cases, Mario vacuum-seals the pršut immediately after cutting - so you always get the product in maximum freshness!
The delivery is of course in refrigerated packaging.

- 2 bundles of wild asparagus
- 50 ml Chiavalon Organic – extra virgin olive oil
- 100 g Pršut
- 8 eggs
- pinch of salt
- Put a pan on a stove, add the oil and add the thinly sliced prosciutto.
- Break or cut the asparagus into 3-5 cm pieces and add them to the prosciutto in the pan after 2-3 minutes.
- Stir fry for a couple of minutes, cover with mixed eggs and salt, keep stirring until the eggs are done.
